Vino, cucina e camere

High above Finale Ligure, tucked into an ancient valley where olive trees and vines have long shaped the landscape, Valleponci presents less like a hotel and more like a home that happened to grow large enough to welcome others.

The project was founded by three friends fresh out of the University of Gastronomic Sciences in Pollenzo, who chose to create their own place: part farmhouse, part restaurant, part guesthouse. Vino, cucina e camere (wine, food and rooms), simple words that somehow manage to describe an entire way of life.

The old stone buildings sit quietly in the valley, surrounded by vines, olive groves, and an abundant orto that supplies much of the kitchen. Their vineyards are only a stone’s throw away, the olives for their oil grow just beyond, and the sea remains close enough to feel in the breeze.

Rooms are spacious and peaceful, full of character without excess. Ancient limestone walls meet crisp linens and heavy sheets. A subtle mist perfumes the space, composed of essential oils distilled from the surrounding landscape and carrying traces of wild herbs and distant saltwater. Hospitality here is thoughtful, warm, without tightening into formality. The team is remarkably international, often made up of fellow Pollenzo alumni who have found their way to this corner of Liguria. There is an ease between them, a sense of shared purpose and genuine affection that puts guests at ease.

The cooking is farm-to-table, though the expression hardly does it justice. Vegetables come from the garden, olive oil from their trees, wines from their vines, with a close network of producers filling the gaps. Every ingredient arrives with a story, and every story seems to lead back to someone personally connected to the property.

Breakfast under the pergola is reason enough to stay: eggs from the chickens wandering nearby, thick slices of homemade sourdough with a caramelised crust, tomatoes from the garden, local yogurt, seasonal fruit. The food throughout the day carries the same quality. It’s anchored in tradition, but never trapped by it. Familiar dishes appear with small twists, thoughtful rather than showy.

Beyond the tables, Valleponci has become a culinary hub. Throughout the season, they organise workshops and retreats built around the producers they work with. Guests might spend a day learning about olive cultivation and harvest techniques before sharing a dinner centered on the resulting oil. Others explore vineyards, fermentation, cheese-making or foraging, meeting the people behind the products before returning to the communal table.

The sea lies only 10 minutes away by bicycle, if the mood strikes you. Open from April until late autumn, Valleponci is redefining luxury through proximity — to the land, to the people who work it, and to the stories that emerge when food is treated as a different kind of sustenance: something worth gathering around. –Candice Chemel
