It’s Friday morning. What’s on the agenda for today?
My schedule is always quite packed with business meetings, appointments with various stakeholders in the training sector, and leading internal team activities. L’atelier des Chefs consists of 200 team members with whom we’re building a prosperous future to continue fulfilling our company’s mission: “Helping everyone achieve their potential.” We strongly believe that manual professions are professions of the future, especially in the face of growing AI. Our motto to convince others: “The intelligence of the hand is not artificial!” It’s an ambitious program in France — and hopefully, one day — internationally.

Any restaurant plans today, tonight, this weekend?
Thursday evenings are usually reserved for dinner with friends at home. It’s the perfect chance for me to cook, which has always been my true passion. On the weekends, it’s usually a mix of sports or visiting friends outside Paris… where I often end up cooking as well! A restaurant that really stood out to me this year is Faubourg Daimant. It’s 100% vegan, but as delicious as it is innovative.

How about a little leisure or culture?
The Opéra Garnier or Opéra Bastille, where there’s always an excellent program, especially for modern or classical ballets. The Théâtre du Châtelet, a venue where so many stars have performed. A stroll through the Marais, where there’s incredible energy on every street corner.

Any weekend getaways?
When I get tired of Paris, I head to the sea… Not too far away in Normandy, stopping by Giverny to visit Claude Monet’s stunning garden. Or a bit further, to La Trinité-sur-Mer, where I love spending a weekend racing sailboats, no matter the weather.

What was your last great vacation?
My last getaway, a four-day trip, allowed me to explore the Prosecco Road in Northern Italy. Just an hour from Venice, it’s a breathtaking region in autumn, as the colors of the vineyards are magnificent. The mountains, especially Monte Grappa, just before the Dolomites, are extraordinary. And the Italian gastronomy — mamma mia, what a delight!

What store or service do you always recommend?
For equipping yourself with kitchen tools, with a wider selection than at L’atelier des Chefs, I recommend E. Dehillerin, located at 18 rue Coquillère in the 1st.
