Without a doubt, Jenny and Paulo. I’ve been going there for three years, even after I moved further away. They are terrific. I go to the site at Rue de Poissy in the 5th (they’re also in the 17th).
Hands down, by a mile, David Mallett (but make sure to go to his original salon, way more charming than his outpost at the Ritz). For a cut, ask for Fanny, and for colour, for Nadia.

THINKING ABSTRACTLY: The new cocktail address from the team behind Bar Nouveau, Abstract Bistro (2nd arr, 14 Rue St-Sauveur), opens today. Described by the team as part retro-bistro, part postmodern distillery, the new address serves up drinks in a reimagined classic French bistro, or in the contemporary suspended glass lab. The menu focuses on single ingredients and spirits made onsite, and guests can expect twists on classic bistrot drink staples (Picon Bières and Mauresques, for example) along with butter martinis, bell pepper margaritas, and signature dishes such as eggs and soldiers paired with caviar and a marmite reduction, which is a byproduct of the bar’s Marmite Bloody Mary.
SWEET MYSTERY: Renowned French pastry chef Cédric Grolet has been teasing his mysterious new address, the chocolate shop Cedric et La Chocolaterie, on Instagram. An exact opening date hasn’t been given yet (nor has the location been revealed), but doors are expected to open next week. –Nicola Leigh Stewart
