It’s Friday morning. What’s the scene at your workplace?
Fridays — or any day in the week — mornings are generally when I take time to work out or do something for myself. After school drop-off, that’s usually what I do for one hour (at the moment it’s Reformer Pilates, weights or hot/cold exposure). I like Studio Anatomy (in London). After that, we have our weekly managers’ meeting with the team to debrief the week.

Any restaurant plans today, tonight, this weekend?
If I’m in London (at the moment because I’m moving), I’ll do Elliot’s in London Fields or Goodbye Horses. In Paris, my failproof favorites: Tarantula, Le Servan, Amarante.

How about a little leisure or culture?
I love live music, and depending on traveling and childcare, I do my best to go to concerts as much as I can. Went to see Orville Peck at Roundhouse in Camden, and it was magical.

Any weekend getaways?
If you are in England, I suggest Whitstable, a beautiful beach town with the best oysters and delicious places to eat and relaxing vibes. I love Old Neptune pub (for beers), The Lobster Shack, The Whitstable Oyster Company, and Grain and Hearth Bakery.

When in France, I love going to Normandy, to La Grenouillère, one of my favorite places, or a little escape to Nice. I always Airbnb, but if you can stay at La Grenouillère, that is the best.

What was your last great vacation?
Brasov, in Romania for Christmas, is gorgeous. There’s snow in December, and it is amazing with delicious food, amazing traditions, and great food. Ana Hotels Hotel Sport in Poiana Brașov is an easy place to stay if you want to ski and you have kids. Also: visit Rasnov town: it’s really nice. Our highlights were Restaurant Șura Dacilor, Coliba Haiducilor, and Sergiana Mureşenilor.

What’s a recent big-ticket purchase you love?
Bad Bunny tickets (totally worth it).

What store or service do you always recommend?

• London: Come to Victoria Park and visit the village. It’s full of amazing shops you will find absolutely everything you want and don’t need. I also like Deli Downstairs and Bruno.

• Paris: For vintage clothes, Dressing Particulier in the 3rd arr; for objects, Merci; for cheese, Olga.

The Bois de Boulogne is just around the corner for sports and fresh air, and Montparnasse station is within easy reach, making Bordeaux only a few hours away by high-speed train. It’s Friday afternoon. How are you rolling into the weekend?
After a week spent traveling between Bordeaux, the Loire Valley, and Burgundy, weekends in Paris feel like a luxury. We slow down and stay close to home with my husband and children. Since the kids have school on Saturday mornings, Friday night dinners with friends are our ritual: sometimes at a favorite Parisian address, sometimes at home, with a simple but generous table.

What’s on the agenda for today?
Today is all about Burgundy. In February, we opened Les Sources de Vougeot, our new five-star destination, with two restaurants and a Caudalie Spa. The menu by our chef, Julien Martin, is wonderful. His croque-escargot and reimagined œuf meurette already feel like signatures.

Any restaurant plans today, tonight, this weekend?
I’m especially excited to experience Epicure, the gastronomic restaurant at the Hotel Le Bristol. It’s one of those timeless Parisian palace institutions that never fails to inspire.

How about a little leisure or culture?
In Burgundy, I love stopping at our neighbor, the Château du Clos de Vougeot, a place where nine centuries of wine history and monastic tradition still resonate.

What was your last great vacation?
Last summer, we returned to New York with our teenagers. I hadn’t been back since before Covid, and the city felt more vibrant than ever. New hotel openings like Nine Orchard have added fresh energy, but New York’s incomparable pulse remains unchanged.

Nature’s fire

The Perche is basically Paris’ 21st arrondissement, except there are fields, cows, and you can actually breathe properly. Two hours from Paname, quite a few city folks have moved out here with their suitcases, tools, and desire to make things with their own hands. Craftsmen obviously, but chefs, too.

That’s what happened with Paysages in Bellême. After sharpening his skills in some very good Parisian restaurants, chef Sylvain Parisot came here with his sweetheart and put down his knives. A bit of renovation later, and voilà: a soft, peaceful beige bubble, filled with light and tiny bunches of flowers on the tables just to remind you that no, you’re not on Boulevard Voltaire anymore. And when temperatures outside decide to go completely nuts, the coolness inside is pure happiness. Sit down and your brain instantly drops three gears.

On the plate, nature is the boss. Seasons, local producers, and whatever happens to be growing and available. From all that, the chef, alone behind the stove, creates food that clearly enjoys wandering off the beaten track. And since we’re surrounded by trees, why not go all the way: pretty much everything gets touched by the wood fire.

But that fire doesn’t mean throwing three potatoes into the embers and calling it a day. There’s some serious thinking going on here, as with the black pudding mochi, the kind of dish that could make even the most stubborn black-pudding hater reconsider their virtues. Then come ember-roasted tomatoes with fresh goat’s cheese, smoky, melting, punchy, creamy… and delicious.

Wines are natural, and the alcohol-free drinks come correct, too, and can be ordered without feeling like you’re abstaining from something. Those drinks, much like the rest of the menu, demonstrate Parisot’s talent for taking something familiar and sending it somewhere far in another direction, completely unexpected, with the natural world’s qualities framed to highlight all the bounty they offer.

In the heart of the Côte de Nuits, surrounded by vineyards that stretch toward the horizon, Castel de Très Girard sits just high enough above the vines to take in the view, yet remains rooted within the landscape.

On Sundays, the hotel hosts a brunch practically tailor-made for easing into the day after a generous dinner the night before (perhaps accompanied by one too many glasses of Grand Cru).

Whether seated by the fireplace or on the shaded terrace, guests inevitably find themselves drawn toward the centerpiece of the experience: the buffet.

Starting brunch with oysters? Brilliant. Fresh, briny, and delicately nutty, they seem designed to clear away the last traces of the previous evening and awaken the palate. Then those seeking a gentle transition from breakfast can start with pastries, viennoiseries, and cereals. Others head straight for plump shrimp, seafood platters, carefully prepared maki, charcuterie, and thoughtfully selected cheeses. An egg station allows each guest to order eggs as they like them, while a series of beautifully composed vegetable dishes celebrate the season, such as asparagus generously coated in a silky sauce.

At the far end of the terrace, a sturdy cast-iron brasero occupies a raised platform. Throughout the service, the chef grills the dishes of the day to order: perhaps a pluma of pork or a thick fillet of salmon.

Desserts are a final indulgence. A choux bun with whipped cream and blackberries, a rich chocolate mousse, or a homemade sorbet.

With no fewer than 124 Champagne references and a cellar list stretching over 50 pages, the wine list reflects both ambition and great local pride. Thirty pages are devoted exclusively to Burgundy, a forgivable chauvinism given the setting. The selection is sharp and generous, ranging from approachable regional appellations to sought-after allocations, with bottles suited to every palate and budget. Alongside the great names, DRC to not name any, are discoveries such as the Aligotés of Goisot, which I am always delighted to encounter.

And should a glass of chardonnay once again persuade you to stay a little longer, the hotel’s eight intimate rooms offer the perfect excuse. A final night among the vines, a quiet morning overlooking the slopes of Burgundy, and the feeling that the weekend need not end just yet. –Candice Chemel

Neighborhood you work in: It depends on my assignments and clients. I work from home, the TF1 Tower, and very often, Hoy on Rue des Martyrs. I juggle professional meetings, computer work, yoga, and lunch there — it’s my coworking space, my second home. I love being a bit nomadic. Funny anecdote: two weeks ago, I had a very important call, followed immediately by a meeting at Le Bon Marché. There wasn’t enough time to take the metro between the two, so I ended up taking my call right in the middle of the Bon Marché communications team — luckily, I know them well! I also have two-year-old twins, so working from home is ideal. Whenever I have a break, I cook for them.

It’s Friday afternoon. How are you rolling into the weekend?
By Friday afternoon, I’ve usually reviewed the week ahead. I’ve never minded working on a Saturday or Sunday — there’s something quite pleasant about working when others aren’t. It’s quieter.

My reflex is to make sure I have everything ready for the boys’ meals so I can relax afterward. If we’re staying in Paris, I’ll schedule a couple of yoga sessions, brunches, dinners with friends, and some time just the two of us. Whether it’s a big departure with suitcases and trains, or a quiet weekend at home, we always manage to do exactly what we feel like doing — and by Sunday night, we usually say, “wow, that was such a good weekend.”

What’s on the agenda for today?
Today I’m writing my Friday column for Bonjour La Matinale on TF1. The concept is simple: We build the segment around the guilty pleasure of our Friday celebrity guest. Sometimes I find out at the last minute (which means it’s a sprint), but this time I’ve known in advance, so I can prepare.

We’re welcoming Anne Roumanoff this week, but we’ve also had guests like Laurent Lafitte, Pierre Niney, and Manu Payet. Often, the topics are ones I wouldn’t necessarily have chosen myself, which makes it interesting. I try to highlight a great artisan, add a useful takeaway for viewers, and of course, include a few jokes and some wordplay.

After that, I need to film a Thermomix video ahead of a gala. I’ll revisit the brief and think about how to present both the recipe and the challenge creatively. Then I have yoga and lunch with a dear friend who works at Ruinart — we’ve collaborated a lot and become very close. I’m also preparing my next reel for my YouTube channel À Côté d’la Plaque. It’s a recipe by Stéphanie Le Quellec that we filmed earlier, and I’ll repost it for asparagus season. Tonight will be calm, as I went out every evening last week, so I’m slowing down. A bit of cooking, a quiet evening. That’s a fairly typical day.

Any restaurant plans today, tonight, this weekend?
Last Saturday, I went to La Joie on Rue du Chemin Vert — extraordinary. I travelled to Sri Lanka fifteen years ago, and the food left a lasting impression on me. At La Joie, I rediscovered those haunting flavours. On Île Saint-Louis, a former Noma chef recently opened Cypsele (intel) — that’s my next target. It’s open Wednesday to Saturday, part of the new wave, and it looks completely mad in the best way.

How about a little leisure or culture?
I recently saw Panayotis Pascot’s show — powerful, introspective, funny, and sad at the same time; slightly uncomfortable, yet deeply touching. I had loved his first show so much I saw it twice, and this one is really something. In a completely different style, I adored Alexandre Kominek at the Olympia — no limits, but brilliant. I also love going to the ballet at Palais Garnier. Bastille moves me less, but Garnier is something else entirely. With the children, we loved Euphoria at the Grand Palais and an exhibition at Palais de Tokyo. At two years old, their attention span is still short, but I can’t wait to take them to the theatre and cinema when they’re older.

Any weekend getaways?
It’s a gift from my partner and me to my father-in-law, though I initiated the idea: three days of hiking and bivouac in Switzerland this summer. Daytime picnic cooking over a grill, nights partly under the stars, partly in mountain refuges.

He loves hiking but has never truly slept in the mountains. For us, it’s something deeply meaningful. A friend in the Basque Country organizes clandestine mountain lunches (completely legal!) where we hike, settle in a shepherd’s hut, light a fire, grill homemade bread, and slice sashimi. Through him, we connected with a Swiss high-mountain guide, fully equipped for alpine terrain and glaciers. For three days, they’ll take us through hiking, a bit of mountaineering, bivouacs, refuges, and endless stories about landscapes and plants. That’s the kind of gift I consider essential: experiences you remember for life, that reconnect you to its meaning.

What was your last great vacation?
My most formative travel memories date back to childhood — Vietnam, Kenya, and Egypt between the ages of eight and 12. They shaped me deeply. I once told my parents, “If I never travel again later in life, it won’t matter — I’ve already lived so well with you.”

More recently, Mauritius has been a place we love returning to. Beyond the beautiful hotels, the island offers extraordinary terroir and hiking. One highlight is a tiny hut called Vik’s, nestled at the far end of the beach of the Lux Le Morne hotel. The owner is a fisherman who takes you out to catch sea urchins, serves his homemade rum, and prepares everything himself. When making dessert, he presses sugar cane on the spot to caramelize bananas with coconut powder. It’s surreal — pots stacked to the ceiling, intimate seating for two to six people, completely embodied and authentic.

In Port Louis, I love the bouchons at Jim Snack in an extraordinary broth, the delicious rotis and dholl puris at Chapeau La Paille, and the allouda at Pillay — a large glass of custard with tapioca pearls and ice cream on top, drunk as an aperitif. It makes no sense, but it’s brilliant. Mauritian friends who’ve lived there for 20 years have shown us all the best spots.

What store or service do you always recommend?
I often send people to Lanqi Spa for ancestral Chinese massage treatments. It’s powerful and deeply restorative. They read your face the moment you arrive, almost like reflexology, but purely visual. Beyond sleep and hydration, they’ll tell you if your energy is blocked or your liver is struggling. I love it.

Burgundian escape

Hoteliers Jerome and Alice Tourbier pioneered a new style of wine country hospitality when they opened Les Sources de Caudalie in 1999. Their formula? Find a prestigious wine-country location for a hotel — in this case, on the edge of the Château Smith Haut Lafitte Grand Cru Classé wine estate owned by Alice’s parents Daniel and Florence Cathiard — build or renovate a property with décor that reflects the region’s viniferous and local history, and complete the offer with a spa and wellness program and a gastronomic restaurant and a bistro.

The latest Les Sources property, Les Sources de Vougeot, has just debuted in the charming village of Gilly-les-Citeaux in the Côte d’Or. This hotel was created by renovating the 14th-century Château de Gilly, the former 6th-century residence of the Abbots of Citeaux. This complex of handsome stone buildings with steep roofs tomettes (traditional flat Burgundian terra-cotta tiles) is surrounded by an ancient moat and beautiful gardens.

Though history and heritage are at the core of Les Sources de Vougeot’s identity, A.S.I. architects gave the hotel interiors a well-measured dose of contemporary minimalism, which works brilliantly with the historical buildings’ austere Cistercian architecture. Rooms here — each with their own respective, unique décor — are large and cosseting, with lovely views over the surrounding park and vineyards, or the interior courtyard where porters greet you with wicker luggage wagons. The striking spa, with an indoor pool, sauna, and hammam, is located in the stone-pillared medieval cellar where monks once stored kegs of wine. There’s also a large outdoor swimming pool and tennis court.

Les Sources de Vougeot has two restaurants, L’Auberge des Citeaux, a bistro, and Le Clos de la Tour, its gastronomic table. Both are run by the very talented young chef Julien Martin, who returned to his native Burgundy after winning a Michelin star in Provence and working at several of Les Sources hotels’ other kitchens.

Martin’s incisive and very elegant modern renderings of traditional Burgundian dishes, like John Dory with a sauce pochouse, are served at Le Clos de la Tour, perhaps the best new restaurant to open in Burgundy in some time. L’Auberge is very good as well, with classics like jambon persille and boeuf bourguignon.

Ultimately, Les Sources de Vougeot is one of those hotels where you just want to stay put for a week, because — aside from its warm hospitality, delicious food, and plush comfort — it’s supremely Burgundian. –Alec Lobrano

It’s Friday afternoon. How are you rolling into the weekend?
Friday afternoon first means Friday night service, which is always an important one. Then it’s about figuring out what we’re going to do the next day with the children — activities, family time. I usually don’t work on weekends; for now the restaurant is open on Saturday evenings, but we’ll stop that by September. I’m a dad, so when I’m not at the restaurant, a lot of my time revolves around my kids. I do judo with my son, classic dad activities.

What’s on the agenda for today?
We’re constantly creating new dishes around seasonality. We just finished rhubarb season, and we’re already thinking about strawberries, zucchini, tomatoes — always anticipating what’s next. A lot of the creative process is about asking ourselves how to elevate a vegetable. Right now I’m obsessed with fennel, what works, what doesn’t, and how I personally like to eat it. So for a few weeks I’ll probably drive my wife and kids a little crazy before moving on to another vegetable.

We’ve been working this way for nearly ten years now, developing new techniques to present vegetables differently. We also reinvent sauces and charcuterie in more plant-based ways, using techniques from Japan or India while keeping everything aligned with the restaurant’s style.

Any restaurant plans today, tonight, this weekend?
When I’m home, I actually like making very simple things, almost snack-style food. From time to time, for special occasions, we go to friends’ restaurants, including former team members who’ve opened their own places. With the kids, we try to keep things easy and adaptable. Near our home, we like Pizza Viva, which works exclusively with ancient wheat flours. It’s really great, and the children love it. For a more relaxed dinner with friends, especially because several of my friends are flexitarian and one is vegetarian, we often go to Maslow. I love the spirit of the place.

Any weekend getaways?
We often visit friends who run a farm in Normandy, near Bonnebosq. I love showing my children how vegetables grow and where milk comes from. I think it’s important for them to understand where food comes from and how we nourish ourselves.

What was your last great vacation?
Last summer we went to Saint-Cast in Brittany, between Saint-Malo and Saint-Brieuc near Cap Fréhel. It’s a family spot for us, a return to our roots and our family home. The area isn’t necessarily famous for gastronomy, but nearby in Cancale, you have to go to Roellinger. Of course, there’s the famous Château Richeux and its restaurant Le Coquillage, but there are also plenty of smaller, more affordable restaurants that are just as good — for example, Le Bistrot de Cancale. I really admire their ethical approach.

What store or service do you always recommend?
One thing I love about Paris is how many highly specialized shops you can still find, especially for kitchen equipment. E. Dehillerin is an absolute institution for cookware. The whole neighborhood around it is full of tiny shops where you can find the perfect offset spatula or highly specific tools for one precise use. I also love Olivier Roellinger’s spice shop whenever I need something very particular. Paris still has these niche stores where you can find truly exceptional products.

Another favorite is Maison Valette, which specializes in products from southwest France. I sometimes buy truffles there — their quality is incredible. They work directly with producers, so there’s no middleman, and the truffles are always at a beautiful stage of ripeness.

Where are you donating your time or money?
I’m co-president of an association called Bon pour le Climat. Whenever I can, I also cook dinners with Refettorio, an organization located beneath La Madeleine church that serves meals to people in need. I try to do it once or twice a year with my daughter, Colette. We help serve people who don’t necessarily have the means to eat in restaurants, using surplus ingredients and unsold food. I think it’s a beautiful initiative.
