What’s on the agenda this weekend?
When I’m in Clamart on Sunday morning, I go to the covered market at La Fourche, with my regular vendors, around 9a. Then a quick stop at La Laiterie Moderne, Avenue Jean Jaurès, to stock up on cheese. Afterward, I head to the kitchen and prepare both meals for the day, often roasting vegetables and making cakes for the week ahead. Sometimes I go gardening at my plot, which I’ve had for 10 years with the association Les Jardins du Fort d’Issy.

Any restaurant plans today, tonight, this weekend?
Tonight, I’m having pizza with my son. I’ll pick it up from Inizio, Rue du Montparnasse in the 14th arrondissement, on my way home from the bookstore by bike, and we’ll reheat it.

Any weekend getaways?
The city of Dijon is ideally located and easily accessible by train, with a beautiful pedestrian city center and numerous restaurants (La Cave se Rebiffe, Monique, Cibo...). Rennes is also great, with the Marché des Lices, and an abundance of fantastic restaurants (Ima, Racines...).

What was your last great vacation?
A short trip to Northern Brittany, Including a stop in Cancale at Roellinger to have a snack at Grain de Vanille and to stock up on spices at their shop. If your budget allows, don’t hesitate to have a meal at the bistro (by the sea) or even at the three-Michelin-star restaurant at Château Richeux in Saint Méloir des Ondes.

From Cancale, I love heading up to Pointe du Grouin to take in a breath of fresh air. As I drove along the coast toward Saint-Malo, I discovered Bertrand Larcher’s Breizh Café farm. In Saint-Malo, don’t miss the Bordier butter, and try the unique Japanese restaurant Tanpopo. On the other side of the Rance River, stroll through the old town of Dinan, dream in front of the beautiful villas in Dinard, and finish the day with a visit to Crêperie L’Hermine in Saint Briac before enjoying the end of the day at the Garde beach or Pointe du Décollé.

What’s a recent big-ticket purchase you love?
A subscription for massages at La Maison du Tui Na (on the recommendation of Delphine Plisson, who mentioned it to me years ago).

What store or service do you always recommend?
I’m a devoted fan of Rœllinger spices (Rue Ste Anne in the 2nd) because any of their mixes or even their pepper can elevate any dish or recipe. It’s the magical touch that always surprises everyone!

Built for lingering

At the entrance to Maison Ailhon, located in a characterful village in Ardèche, you’re immediately welcomed by a beautiful zinc counter. To the left, a round table sits between a bookshelf carved into the fireplace and a delicate still life painting by Max Osoki. The kitchen faces you, open, benefiting from the generous ceiling height of this stone house.

Further in, the main dining room unfolds, almost cave-like, with lime-washed walls and a vaulted opening framing a large window leading onto a terrace of green wrought iron. This warm, enveloping restaurant is the work of Lucie Soerensen in the dining room and Clément Guernalec in the kitchen, who bring with them the quiet precision of their past experiences at Septime and l’Auberge de Chassignoles.

The menu is always blind. You simply indicate any dietary restrictions when booking. For lunch, a three-course menu at €28; in the evening, a five-step journey costs €48. The cooking is generous and quietly expressive. Tempura of snow peas and green asparagus, served with a harissa mayonnaise, tastes crisp and vibrant. White asparagus velouté, with croutons, house-cured ham, a soft-boiled egg, and wild garlic leaves, proves round and comforting.

A bottle of Fleurs Sauvages 2024 by Jérôme Jouret, a blend of Altesse, Vermentino, Roussanne, and Viognier, runs alongside the meal. A pollock from Noirmoutier, sourced from a small fisherman they work with, arrives with multicolored chard, peas, carrots, and a beurre blanc sharpened with sardine garum. It’s bright, layered, and quietly bold.

The cheese plate is served at exactly the right temperature, a detail that makes all the difference. Then dessert: a hazelnut butter biscuit, strawberries lightly sugared, and a chantilly infused with black cardamom — soft, fragrant, almost weightless, like powder.

After the meal, it feels natural to step back outside and wander into the surrounding pine forest, past oak trees, down quiet paths lined with old stones, the village slowly dissolving into nature. If you’re staying in one of the two rooms upstairs, there’s breakfast the next morning built around local produce.

It’s worth considering, because Maison Ailhon is that kind of place: one you arrive at gently, and leave just as slowly. –Candice Chemel

It’s Thursday morning. What’s the scene at your workplace?
I always start the day with a walk along the glistening Seine with Djuna the gorgeous bookshop dog. I need this escape as I live above the bookshop! Before opening our doors, the team takes 15 minutes to talk about the day’s priorities or just the current book we love. Then we open the doors and see who is on our doorstep, and Djuna welcomes all.

What’s on the agenda for today?
At the moment I’m thinking of how to celebrate the bookstore’s upcoming 75th anniversary, as well as finishing work on a new section (art and history books). We’re also thinking about alternatives to current social media outlets and how to stay in touch without the algorithms (after reading Jonathan Haidt’s The Anxious Generation and Sarah Wynn-Williams’ Careless People).

Any restaurant plans today, tonight, this weekend?
L’escale on Île Saint-Louis is my favourite spot right now. It’s the kind of place you’d expect to find in the 11th, not the 5th. It has the best music and crowd, and I love that people talk to strangers there.

How about a little leisure or culture?
My sons have insisted on visits to Roland Garros for the tennis tournaments and now I’m into it! It’s always a good idea to catch a live jazz concert by my friend Alex or a classic old movie at either Le Champo or Le Grand Action on Rue des Écoles.

Any weekend getaways?
London for great shows and funky fashion and the buzzing energy! Deauville (the 21st arrondissement de Paris) for some sea-air! And any of the forests near Paris such as Rambouillet, Fontainebleau or Meudon.

What was your last great vacation?
Venice! A classic. Our hotel wasn’t great but we spotted a beauty: Hotel Cipriani. (Its restaurant Cips is great for a special occasion.) Palais des Doges has to be one of the most incredible buildings in the world. As always, we seek out the local bookstores and it’s a great way to get a flavour of the city. The bookshop Damocle Edizioni was particularly special as the owner also prints limited editions of poetry including one of our favourites, Lawrence Ferlinghetti.

What’s a recent big-ticket purchase you love?
A special treat is a facial at AIME.

What store or service do you always recommend?

Tucked just off the Palais-Royal across from France’s Ministry of Culture, the new boutique GIFTSHOP is easy to miss. There’s no flashy storefront, just a discreet door marked with the name. Ring the doorbell and climb the beautiful old staircase to the second floor, where the boutique subtly reveals itself.

A highly curated, design-led souvenir concept that’s part boutique, part creative studio, GIFTSHOP produces objects tied to the city’s best addresses, old and new. Inside the apartment-like space, a bistro table is set with linens from La Fontaine de Mars, Café des Ministres wine glasses, and an ashtray from La Closerie des Lilas, objects that carry the memory of crowded tables and slow, sunlit afternoons. In the next room, a wooden cabinet holds bistro plates from Brasserie Lipp, Le Paul Bert, and Au Pied de Cochon, their typography instantly recognizable to anyone who has lingered late into the evening at these iconic Parisian establishments.

A polished brass luggage cart, more hôtel particulier than retail fixture, holds a varsity jacket, scarves, and colorful hats from Folderol. And the pièce de résistance, an orange bike from À la Mère de la Famille (whose craques might be among the most addictive chocolates in Paris), leans against the wall. Each item is part of the setting, yet everything is for sale.

Conceived by Mathieu Lebreton and Julien Pham, GIFTSHOP is both a shop and an editorial project, creating collectibles rooted in craft and storytelling rather than mass production. There are no miniature Eiffel Towers, no clichés here, rather a more meaningful reflection of the Paris that still exists. Many of the locales they collaborate with remain family-run, passed down through generations, and the shop is a quiet reminder that the soul of the city lives in these places, and in the people committed to keeping them alive.

There’s something about the address, too. This very spot once housed Le Boeuf à la Mode, founded in 1792 and considered one of the first restaurants in Paris, a little piece of history that echoes what GIFTSHOP is doing more than two centuries later. –Sam Brenzel

It’s Thursday morning. What’s the scene at your workplace?
Thursday is one of the busiest days of the week for us, as we need to get everything organized and ready for the weekend. The first thing I see at Déviant is the mountain of fish, vegetables, meat… all our deliveries. It’s like a little ritual for me: taking the time to open all the boxes, see what the fisherman sent us, check the quality of the vegetables, and so on.

What’s on the agenda for today?
Busy day…

• 9h00: We’re at Déviant, and the day begins!

• 9h45: I head to Shin Café, a super chill spot just 10 meters from my workplace, for a coffee and to write out the prep for the day’s menu.

• 10h00-13h00: Cooking and prepping the food. Once a week, I like to have lunch outside. I’ll take a one-hour break to go to Bao on Rue Saint Denis and enjoy their wonton noodle soup! Then, it’s back to Déviant to finish the prep.

• 16h00: I visit the barber for a quick skincare treatment.

• 17h00: Team meal. The whole Déviant crew takes a break to eat and share a moment together.

• 17h30-18h30: Crunch time. Everyone’s running around getting the restaurant ready for service.

• 18h30: Showtime, baby!

• 23h00: Done.

• Midnight: A quick drink with friends at my new favorite spot, Piccolo.

• 02h00: Hopefully asleep… but who knows what life has in store?

On Sunday, I’ll head to Buttes Snack Bar. There’s a cool event happening with the guy from Donna Paris that I’m sure will be fun and exciting. Monday night is also a ritual for me: I’ll go to Lao Siam in Belleville. I even enjoy going there alone.

How about a little leisure or culture?
I recently visited the first-ever “beer spa.” It’s literally a spa where you have a jacuzzi or a steam room and a prestigious selection of beers. I mean, it’s not something I’d do every month, but it was one of my most enjoyable recent experiences.

Any weekend getaways?
Yes! I love escaping Paris to visit Marseille. I have lots of friends there, and the food scene is amazing. I adore going to Ippon or Figure. If you’re lucky with the weather, you might even get to enjoy a swim.

What was your last great vacation?
Last summer. I was lucky to be invited to a Cook for Two dinner in Turkey. I had the pleasure of discovering so many places in the region, starting with Istanbul and heading south to Bodrum. The people I met, the food, the vibe: everything was incredible.

In the heart of the village of Saint-Julien-en-Vercors, Café Brochier has been the local café and grocery since 1880, when the building was first constructed by Raymond Brochier. Almost 150 years later, and recently under new ownership, it still carries that role. From morning coffee and newspapers in the small bar, to lunch, to aperitivo on the terrace, all the way to dinner and a final nightcap back inside, the place moves gently through the day alongside the village itself.

The house is beautiful in its simplicity, with its pale stone walls, wood moldings, a shaded terrace under a pergola, and a small garden tucked behind, where you can slip off your shoes and have a drink with your feet in the thick grass. Upstairs, three bedrooms offer the possibility to stay a little longer, to wake up to the mountains of the Vercors, to the soft morning light, and to a generous, rural breakfast. The decor is simple, pared back, leaving space for what matters most: the landscape framed by the windows.

The menu is hard to beat: a three-course lunch at €38, or the option to order à la carte. The cooking follows the seasons and daily arrivals. Ingredients are sourced with great care, and the producers are always named, a detail that speaks volumes.

The wine list follows the same philosophy: beautiful bottles at friendly prices. We share a 2022 Morgon from Jean Foillard, one of those wines I always return to, often tied to particular moments, though it’s hard to say whether it’s the wine that makes them special, or the other way around.

Everything is made in-house, from miso to fresh pasta. A small amuse-bouche arrives first: a blini topped with fennel, labneh, and cherries — fresh, slightly tangy, gently opening the appetite. Next, a veal tartare with broad beans, scattered with bright dianthus petals—delicate, almost floral. Then either the “Vertacochon,” pork with crushed potatoes, glazed carrots, and leeks, or an ikejime trout, prepared as much care and clarity as anything on the property. Dessert moves around strawberry and elderflower: light, seasonal, quietly fragrant.

Despite outwardly simplistic appearances, there’s real depth in the cooking, and by any reasonable definition, no shortage of precision (in technique) and clarity (in flavor). Like the rest of Café Brochier, nothing is overstated, and nothing tries too hard, and nothing doesn’t overdeliver. –Candice Chemel

Tucked just off the Palais-Royal across from France’s Ministry of Culture, the new boutique GIFTSHOP is easy to miss. There’s no flashy storefront, just a discreet door marked with the name. Ring the doorbell and climb the beautiful old staircase to the second floor, where the boutique subtly reveals itself.

A highly curated, design-led souvenir concept that’s part boutique, part creative studio, GIFTSHOP produces objects tied to the city’s best addresses, old and new. Inside the apartment-like space, a bistro table is set with linens from La Fontaine de Mars, Café des Ministres wine glasses, and an ashtray from La Closerie des Lilas, objects that carry the memory of crowded tables and slow, sunlit afternoons. In the next room, a wooden cabinet holds bistro plates from Brasserie Lipp, Le Paul Bert, and Au Pied de Cochon, their typography instantly recognizable to anyone who has lingered late into the evening at these iconic Parisian establishments.

A polished brass luggage cart, more hôtel particulier than retail fixture, holds a varsity jacket, scarves, and colorful hats from Folderol. And the pièce de résistance, an orange bike from À la Mère de la Famille (whose craques might be among the most addictive chocolates in Paris), leans against the wall. Each item is part of the setting, yet everything is for sale.

Conceived by Mathieu Lebreton and Julien Pham, GIFTSHOP is both a shop and an editorial project, creating collectibles rooted in craft and storytelling rather than mass production. There are no miniature Eiffel Towers, no clichés here, rather a more meaningful reflection of the Paris that still exists. Many of the locales they collaborate with remain family-run, passed down through generations, and the shop is a quiet reminder that the soul of the city lives in these places, and in the people committed to keeping them alive.

There’s something about the address, too. This very spot once housed Le Boeuf à la Mode, founded in 1792 and considered one of the first restaurants in Paris, a little piece of history that echoes what GIFTSHOP is doing more than two centuries later. –Sam Brenzel

It’s Friday afternoon. What’s the scene at your workplace?
What I love doing on Fridays is meeting up with my fellow restaurateur friends. Usually it’s at my place — almost every Friday from 7p, they come over. We talk about Senegal, about food, a bit about current events, and we sometimes plan things like Sunday morning outings together.

Another important Friday ritual is doing my shopping at Nous, an anti-waste grocery store in the 19th. You can find amazing products there, either exceptional items or perfectly good ones that don’t meet standard retail “norms” (like imperfect shapes). I usually go around 3p to pick up ingredients and have fun preparing something for aperitifs with friends or for Sunday meals.

What’s on the agenda for today?
Today we’re testing recipes for our catering catalogue. We’re working on cocktail-style bites inspired by cuisines from all over the world, and also, testing our summer menu. We started at 7a — there are 14 of us working today, from all over: Lebanon, El Salvador, Mauritania, like me. We’re cooking everything from eggplant and peppers to crab.

It’s a stressful moment, but it’s positive stress. It’s also about really listening to the team. I design the menu, but we involve everyone so that it reflects the diversity of the people behind it.

On a daily basis, we feed a lot of people. On the food aid side, it can be anywhere from 500 to 1000 meals a day. For catering, it ranges from 30 to 2500 guests. During the elections, we provided 7000 meal trays for staff working at polling stations across Paris. It’s a big responsibility, and also a real challenge. We won that contract against long-established caterers who don’t necessarily have a social mission. For us, it’s an honor, and proof that we can compete at that level while staying true to our values.

Any restaurant plans today, tonight, this weekend?
One place I went to this week — and where I go all the time — is Rimal in the 17th. It’s a Lebanese restaurant and deli. In my opinion, they have the best hummus in Paris, and incredible kibbeh.

How about a little leisure or culture?
I cycle three to four times a week, usually rides between 40 and 70 km. I usually ride along the Canal de l’Ourcq, sometimes all the way out toward the Seine-et-Marne area, or I take my bike on the RER and head to Fontainebleau — it’s beautiful there. Otherwise, I go to the Bois de Vincennes or Bois de Boulogne.

Any weekend getaways?
This weekend, I’m heading to Senegal to see my daughters, rest a bit, and spend time in the Sine-Saloum region. Senegal may be a small country, but it has very diverse landscapes and atmospheres. Sine-Saloum is beautiful, with mangroves and small islands. Casamance is another incredible region. My home region, Fouta, has many farms and places to explore. And then there’s Dakar — a vibrant city, great for people who love energy, with amazing restaurants and places to visit, like the African Renaissance Monument.

What Paris store or service do you always recommend?
L’Epicerie Sabath in Aligre, in the 12th arrondissement. It’s both a partner of Refugee Food and a place where I shop personally. They specialize in Lebanese, Syrian, Turkish, and Mediterranean products. I buy my olive oil, Greek yogurt, feta, everything. For me, it’s one of the best places in Paris for Mediterranean and Levantine ingredients.

Where are you donating your time or money?
I mainly give my time through Refugee Food, where I work. When I first arrived in Paris as a refugee, I relied on food aid from associations. Later, when I trained and became a chef, I immediately knew I wanted to give back. For the past five years, I’ve dedicated my time to feeding people in need and helping those who have come from far away, and are far from home, building a new life in France.

Perched in the heights of Pigna, the old town of Sanremo on Italy’s Ligurian coast, Babeuf is the project of four friends brought together by a shared desire to create something alive — somewhere between a restaurant, a meeting point, and a rhythm. Just down the street, they also run Piña Social Club, where the night continues in a narrow stone alley, with small benches, good wines, cocktails, and a rotation of live bands and DJs. RESTAURANTS • Recent Notables

• TRÂM 130 (11th arr) is run by Priscilla Trâm, a lawyer-turned-restaurateur who, for six years before opening in the summer of 2024, led a double life. “Lawyer by day, chef by night,” she told FOUND. “I wanted to be surrounded by the neighbors and fellow shopkeepers I love, and to contribute to the lively, creative fabric of this quartier.” With her set-up, where wafts of fish sauce, sugar, and fresh herbs fill the air around our cozy seats and the 15 or so tables with a bit more elbow room, mission accomplished.

• Tucked away on a quiet back street in Menilmontant, behind a quaint, pale-green exterior, MIJO T is a slice of rural France in the 20th arrondissement. Host and owner Isabelle Bouillon opened the intimate restaurant in 2017 and makes time-honored cuisine with unexpected twists, served without pretense.

• There are market streets, and then there’s Rue Daguerre. Something sets this street apart; maybe it’s how Agnès Varda captured its everyday rhythm, turning it into poetry in her film Daguerréotypes. Or maybe it’s because two of its storefronts belong to the same family: Chez Joy and OPLA (above). Both establishments turn out the kind of homemade Thai dishes that can quietly fix your day.

BARS • FOUND Favorites

→ ABSTRACT BISTRO (2nd arr, above), sits discreetly on a small street in the Sentier, but doesn’t behave like a neighborhood bar. It’s a carefully imagined cocktail space where all the spirits are distilled in-house. Opened by members of the Drink More Art collective alongside the team behind Bar Nouveau, it feels like a translation of abstract art into liquid form.

→ LE BAR (6th arr), across from Cyril Lignac’s row of restaurants on rue du Dragon in the 6th, this unassuming spot seats no more than 20 people. It’s the kind of place you only notice once you already know it’s there. The cocktails are striking and precise, as in the Chicharito, tequila and mezcal layered with wasabi, cucumber, ginger beer, and lime. It’s bright, savory, and unforgettable.

GOODS & SERVICES • Recent Finds

• Between Rue Saint Honoré and Rue De L’Opéra sits CHÂTEAU VOLTAIRE, a refined 31-room hotel offering luxury hospitality without the frills. The basement houses a spa (above), which is booked by reservation only. Encased in white stone walls, the spa feels like an ancient cistern, separate from the hustle and bustle of the city just above. The one-hour reservation time slots ensure total privacy, allowing one to unwind in the small pool, the sauna, or on the heated marble.

• Some things don’t need reinventing. That’s the case with the feuilleté au jambon (ham puff) at MAISON VÉROT: white ham, Emmental, béchamel, and a shattering puff pastry. Created by Pierre Vérot and unchanged since, it’s the kind of thing you eat standing up in the kitchen or serve with a green salad (and pretend it’s a meal).

• At LA MAISON DU MOCHI, there are the classics: matcha, black sesame, and yuzu, as well as creative combinations like pistachio, rose, almond, and orange blossom. Each one is shaped by hand, dusted in starch like a powdered jewel, and wrapped like a small gift. There’s no artificial anything, no gluten, dairy, or fats, just that authentically tender, springy texture.

→ HANAKO MURAKAMI, artist, researcher, interpreter (above): I often go to Opéra for my Japanese groceries. Kioko is the classic stop. When I want something more refined, I go to Nishikidôri, a beautiful spice shop where you can find 40 different kinds of salt. There’s also iRASSHAi, near the Bourse du Commerce. And once I’m done with groceries, I usually stop by Fromagerie Hisada, a cheese shop run by a Japanese cheesemaker. Her mozzarella wrapped in a sakura leaf is incredible — it smells exactly like cherry blossoms. She’s a magician with alcohol-washed cheeses too: maroilles washed with sake, goat cheese infused with whisky… she creates things you don’t forget.

→ SIMON THISSE, CEO & AD, La Serviette Paris: Drôle de Monsieur, rue de Poitou in the 3rd, is a French menswear brand whose boutique, like their collections, has that certain je ne sais quoi of French chic and retro flair. It’s a kind of French elegance that mixes materials (wood paneling, tapestries, marble) and styles (from Gatsby to the Fresh Prince of Bel-Air). One of a kind.

→ CHARLOTTE CHENEVIER, co-founder, The Fat Broccoli: Françoise Paris, an online shop offering vintage watches of excellent quality at very competitive prices. I found my Van Cleef & Arpels watch there, and I haven’t taken it off for a year.

• Not far from the Sorbonne, near the Jardin des Plantes, a new hotel has emerged, quietly turning up the volume on light and space in the oldest neighborhood in Paris. The 5th arrondissement may not have been looking for a hotel this airy, but last summer, LE JARDIN DE VERRE BY LOCKE arrived, and somehow, it feels right at home.

• After years spent rooted in Lyon’s culinary scene, Guillaume Montjuré and his wife Chrystel Barnier chose to return to Barnier’s native Vercors, settling into her uncle’s former home and opening the restaurant PALÉGRIÉ. The setting is quietly beautiful, a charming house with a small garden, a field just across the way. At the heart of it all is Guillaume’s open kitchen, dedicated to wood-fire cooking.

• In the winsomely pretty little village of Sils Maria in the magnificent Engadin Valley of Switzerland, CHESA MARCHETTA (above) is the latest project of Artfarm, the hospitality company founded in 2014 by Iwan and Manuela Wirth (yes, that Wirth, of global mega-gallery Hauser + Wirth). We were immediately delighted by the Wirth’s signature: art everywhere in the hotel, including the intriguing Louise Bourgeois statue in the hallway near the lifts upstairs. We instantly loved our room as well, an attractive tour de force of traditional Alpine hospitality.

It’s not every day that one finds themselves tasting cocktails by cool-kid mixologist Remy Savage alongside a menu conceived by renowned chef Alexandre Mazzia, in a 19th-century Anglo-Normand castle no less. But on this day, I did. And I learned the hard way that although a cognac pairing suggests uninhibited sipping; similar to wine, it sneaks up on you. By the end of a meal with a dizzying number of courses — artful creations like seared Breton scallops, smoked cauliflower, and barbecued corn with Espelette pepper — I was solidly drunk. When in Cognac, I suppose.
